The inspiration for The Exile Poitín (pot-cheen) is drawn from some of the great nights of spirit, music and dance we've shared in Ireland Australia, while also calling back to the Shoalhaven Region's illicit spirit-making past The Exile is a smooth, traditional white spirit handcrafted from local NSW barley and oats. We use a specific mashbill exclusively for our poitín, which is milled  brewed on site, then slowly triple-distilled in our handmade copper pot stills. Only a very small heart cut is taken, then gently mixed with pure harvested rainwater down to 50% abv, which is what makes The Exile Poitínsuch a smooth and complex dram - perfect on its own, over ice, or as an exciting variation in your favourite whiskey cocktails

Poitínis the ancient ancestor of all distilled drinks. It was first made by Irish Monks back in the 6th century in monasteries and known as uisce beatha (pronounced ishka baha) meaning the water of life. The muse of many a good night out, Poitín has been long celebrated in story and song - the stuff of myth and legend!
