The grapes were hand sorted, pressed and cold seled and the juice was then racked to old French barriques for spontaneous fermentation. Some gentle lees stirring mid ferment and after three weeks, the wines were racked off the gross lees and matured in old casks for 8 months.
Fresh strawberry, juicy cranberry and sour cherry with a hint of rustic savouriness and a dash of cream. The palate is soft and fine, with a scattering of rose petals that meander towards a crisp and elegant finish.
