The two varieties were treated in a similar way but fermented separately due to their different tannin structures and picking dates. They were hand sorted, destemmed and fermented in open vats with periodical plunging or pump overs. After fermentation, the Aglianico remained on skins for one week and the Montepulciano spent another two weeks on skins post fermentation to soften the tannins. Both portions were matured in old French hogsheads for ten months, blended together and bottled with minimal filtration.

The Montepulciano adds power and drive whilst the Adelaide Hills Aglianico gives the wine so curves. Dark plums, liquorice and freshly brewed black tea with hints of olives and violet petals. Powerful yet elegant with intense fruit and firm tannins that gracefully tango to the edges of your mouth.

A blend of grapes from McLaren Vale and Adelaide Hills, this is wonderfully fruited and fabulously expressed on the nose showing blackberry, cassis, violet and cedar characters with nuances of game and warm spice. The palate displays excellent concentration and rich texture, beautifully complemented by loads of polished tannins, making it immensely drinkable.
