Generations ago winemakers in the south of France discovered, interestingly, that including a small portion of white
grapes in a red ferment deepened the colour and added complexity to the nose.

The shiraz and roussanne grapes in this wine were grown side by side in the deep red soil of our vineyard at Tabilk,
central Victoria. They were harvested and fermented together in early March 2016 after a long and gentle growing
season. The wine was aged in a mixture of new and old French oak barriques for 18 months before bottling. We find
the splash of Roussanne adds a little perfume to the nose and a silkiness to the palate.

With all my wines I “tread as lightly as I can" in the vineyard and the winery, letting the flavours of the Tabilk “terroir”
shine through in the fruit and eventual wine. It has been made in a very simple and traditional way with minimum
intervention. It is a vegan friendly wine.
