AROMA
Mineral water, wet quartz cut from a river bed; stone fruits hinting at ripeness yet always restrained. Almond, fennel, aniseed, spice and freshly cut cucumber
PALATE
An overarching acid structure around which all of the other flavours, textures and tensions sit. Strong minerality with a concentrated core of tense chardonnay primary fruit flavours: green apple, mandarin and mango, peach and rock melon. This makes for a richer middle palate before a more savoury, flinty, nutty and salty back palate kicks in. A long and dry after-taste wherein the mid and back palate flavours linger.
OVERALL
This white wine is still tightly coiled, yet hints of what good bottle ageing will do to it make it an exciting cellaring wine. The best of both worlds exist in the wine now, however - that interplay between fresh and pert primary fruit and mature reflective secondary fruits and oak starting to wave from a distance. Perfect with a simple fish stew, flavoured with fresh tarragon.
