Method: Single Shot Pot.
Still: Doris.

Inspired By: A collaboration with our good friends at Chirping Bird Wines using the grapes our region is famous for – Pinot Noir.
Tasting Notes: Texturally complex comprising oily and fortified qualities with a flavour profile moving from dried fruit and candied citrus peel to barley sugar with a drying pine finish.
Botanical Profile:
Features the usual suspects such as juniper, coriander seed, orris and angelica root enriched with pinot noir.
Production Method: Single shot, pot distilled Ninch Dry gin macerated with pinot noir grapes then aged in French Oak.
Post Distillation Treatment.
Cut with Pinot Noir Juice.
Macerated on Grape Skins.
Aged in ex Pinot Noir French Oak Barrel.
Winery: Chirping Bird.
Grape Variety: Pinot Noir.
Serving Suggestion: On ice with a slice of orange or ruby grapefruit Dry Tonic (suggest Strangelove Tonic No.8) Also makes an amazing Rosso Negroni.
