Handcrafted in small batches, our Col Fondo is bottle fermented and left undisgorged, leaving behind the lees/sediment. The result? A cloudy Prosecco that embraces all those bold savoury characteristics from sitting on lees.  By using unpressed juice, we can champion the purest part of the grape and avoid harsh flavours from the grape skins & seeds. Think dry, crisp apple, citrus & fresh sourdough. Rounding off nicely with a super fine bubble.
