The fruit is selected from the higher slopes and crops are thinned prior to completion of veraison to give the fruit optimum flavour profile and tannin maturity on picking.
The grapes were bunch sorted into open top fermenters and then hand plunged to aid a gentle tannin extraction. This wine is then aged in new and one year old French oak barrels for 15 months. On blending the winemaker selects the best barrels to go into this wine. Only 50 magnums were bottled in January 2019.
This wine is deep red garnet in colour. On the nose it displays notes of chocolate and dark brooding fruit. The palate is rich and textural with mature developed tannins.
It can be enjoyed now and will cellar well for up to 15 years.

Quality is clear from the outset. It’s rich and ripe, but it has personality too. It’s a meaty, nutty shiraz with a solid core of fruit: asphalt, jellied black cherry and red licorice. Tannin comes sparked with spice. It’s been ripened to within an inch of its life, but it still manages to come through with flying colours.
