Dry, Medium Bodied style of Cabernet SauvignonHunter Valley, AustraliaThe 2019 vintage produced outstanding quality wines. The hot dry ripening conditions provided us with clean, ripe flavored fruit that had good acidity, which we picked at optimum phenolic ripeness. After cool fermentation using aromatic yeast the wine was placed into new American oak Hogsheads. It stayed in these for eight months prior to minimalist filtration. This wine explodes out of the glass with intense dark fruit aromas with an edge of vanillin and Chinese 5-spice. The palate is rich and earthy with young vibrant tannins that will smooth out given a bit of time.

Medium bodied red wines have a lightly textured mouthfeel with moderate flavour impact. Often medium in colour.
