Sparkling shiraz is one of the very few truly unique Australian contributions to the wine world. It sits well at the table, be it with richer, spicy meat dishes or blue cheese. This is a very good example: mottled dark fruits spurt across the mouth, all underlain by a carriage of Grampians peppercorn acidity and a sumptuous creamy texture following its second fermentation in bottle. Long and joyous.
