Dry, Full Bodied style of ShirazPairs well with BeefProduced using equal portions of whole bunch and destemmed fruit along with indigenous yeasts and minimalist wine making techniques of pump overs and aerations reducing to irregular pumch down in a combination of new and aged French oak. MLF was undertaken in barrel and the wine was left on full lees for approx. 14 months before racking and bottling unfiltered and unfinned.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.
