This wine is an expression of the Cambrian Terroir, blending delicate fruit from two premium vineyards along the Heathcote Faultline. Harvested by hand in early March, all fruit was transported directly to the winery the same day it was picked.
The hand picked bunches were crushed and destemmed, then fermented in small, open fermenters for about 10 days. Post fermentation, the wine was racked in to seasoned French (60%) and American (40%) oak barriques and aged for 18 months. The wine was filtered prior to bottling in January 2020.
A structured, fine textured and bright Shiraz with silken pepper undertones, sweet tobacco aromas and lush velvet cherries. All wine, no fuss. Drink now or age for up to 8 years.
