Plenty of plum fruit, but less of the overripe character than many in the high-end malbec category. Seriously oaky with rather dense tannins, but balances well at the finish.
Best served 15° – 16° C
Enjoy with red meats or hard cheeses.
Fermentation through floating cap. A 8-day cold pre-fermentation maceration at 6-8°C, then oscillates at 25-27 °C for 15 more day. And a total maceration of 35 days. Aging in French and American oak for 18 months and 8-10 months in bottles before commercialized.
