About this product


Ten months in oak with three months in stainless steel before
bottling in autumn ’21. All three varieties were fermented in
open-topped fermenters on skins, and matured in French oak
puncheons of different ages. The Grenache for 10-15 days before being pumped over twice daily, the Mataro for 15 days with whole berry fermentation, while the Shiraz was fermented on skins for 10 days with gentle pumpovers twice daily. All components were kept separate before blending at 10 months.
