Aromatically this is a burst of red berries - thinkcranberries, raspberries and strawberries -but there’s also exotic floral and citrus notes.Well balanced, with crisp acidity and a moreishsavoury edge. Finishes dry and long.
The 78% Shiraz is picked early to retainfreshness and natural acidity. After a shortmaceration on skins the majority wasfermented cool, in stainless steel, with aportion barrel fermented in neutral oak to buildtexture and complexity.
28% Saigné Cabernet added for structureand a savoury edge; all of which was barrelfermented using wild yeast. Fine Quaffing froma Margaret River dynamically grown vineyardon the northern edge of Wilyabrup.
