Cool fermentation in a combination of stainless steel (70%) and older French oak (30%). A rather subtle sort of wine, with something of a savoury feel, and lively but not really obvious fruit characters - lemon pith and almond kernel perhaps. It finishes well with an astringent type of acidity.
