Harvested entirely from the Wonga Park Vineyard. Grapes were picked once herbaceous notes had all but blown off. The target was to make a wine which displays classic cool climate cabernet characters. Once the grapes arrived in the winery, all grapes were destemmed into small 1 tonne open pots. Regular pump overs were conducted daily. Upon pressing the wine was run to barrique (20% new) for maturation and Malolactic fermentation. The wine was blended after 10 months and left in tank on light lees for 4 months prior to a light filtration and bottling in May 2017.The appearance is deep red with ruby hue. Fruit tones of red plum, cranberry and blackcurrant imminently hit the nose. There are also tobacco leaf and some choc-liquorish tones. The palate shows juicy red plum, raspberry and fresh bay leaf. Some fresh leather and mahogany tones give an oak presence with firm tannin to help contain the wine in its medium-bodied form. Drinking well now, this wine will continue to improve in the medium term. Drink this wine with hearty protein-rich dishes such as a lamb rack with pureed cauliflower and mint sauce.
