The Chardonnay grapes were harvested exclusively from the estate vineyard in Wonga Park. Numerous small picks were conducted to achieve optimum ripeness across the individual blocks. Once picked, the grapes were chilled and then whole bunch pressed (with pressings cuts) and sent to barrel with full solids. The juice was fermented in puncheons (15% new) with indigenous yeasts to encourage savoury and reductive characters. After the fermentation was completed, the wines were sulphured and left on lees for 6 months with "a couple" of carefully considered lees stirring occasions. The wine was blended, filtered and bottled in November 2018.The appearance is straw with green tinges. The nose shows forward fruits including peachand grapefruits. Creamy oak tones of crème caramel are in harmony with floral notes such as white jasmine.The palate carries peach skin characters, citrus notesincludinglime cordial and lemon meringue pie. The acid is present, but soft and integrated to allow the phenolics to play a small part in containing the wine’s texture. The finish shows beeswax and honeysuckle notes.This will be happily cellar for 5 –7 years from vintage.Drink this wine with lemon butter scallops or simply a roast pork with oven veggies.

Medium bodied white wines have a lightly textured mouthfeel with moderate flavour impact. Often pale lemon coloured to pale gold.

I like the light yellow to straw hue, suggesting energy in store. The palate, mid-weighted, is tautly strung by subtle malty oak, as by a gentle clench of mineral flintiness. Cashew, stone fruit accents. All meandering along a beam of juicy acidity. This is a delicate chardonnay of precision and effortlessness. Nothing out of place; nothing forced. Highly Burgundian.
