Kinmon X3 Rose 720ml, Akita
Sake made with three times Koji than the amount normally used as well as ancient red rice. Red rice and rice malt bring out a subtle sweetness and adds a rosy color. Hints of earth and peach, a touch of strawberry, hints of pepper and rose. Similar but with a rose wine feel to it. Very vinous and elegant. Lots of complexity and a long finish.
Niida Shizenshu Kanatsurae 720ml, Fukushima
Made from all-natural process and organic Toyonishiki rice, not much polishing at 80%, cultivated by brewery in their 600-acre property. Bold with a fresh nose of melon and citrus. Tastes of rice, melon, lemon, some herbs, honeysuckle. Designed for heating, definitely try warm/hot even if you don't usually!

Highly flavourful local Hida Homare rice used polished to 55%. Presents flavours of orange blossom, tangerine, cocoa and clove spice with rich umami. A classic Junmai to drink any time cold and warm. Some pairing we suggest: miso-glazed salmon, pork belly buns, charred octopus.
