Great Southern Chardonnay.
Yellow peach, lemon curd and toasty oak.
Region: Great Southern, Western Australia.
Colour: Brilliant pale straw.
Nose: Lifted aromatic white peach, honeydew, candied cumquant & subtle toasty oak notes.
Palate: A generous yet refined palate with stone fruit, preserved lemon and honeysuckle. Beautifully integrated French oak rounds out the palate and fresh acidity drives the palate giving length to this well-balanced wine.
Oak: 10 months French oak.
Food Match: Pan roasted Chicken breast with a hazelnut gremolata crust served with baby rocket.
Winemaker: Kate Morgan.
Drink Until: 2025.
The 2018 Great Southern Chardonnay was picked at optimum ripeness during the coolest period of the night to help retain the primary fruit flavours. It was transported directly to the winery post-harvest, where it was destemmed and gently pressed to tank and allowed to cold settle. The juice was racked with some light lees to add to the texture and was inoculated with selected cultured yeast. Throughout fermentation and maturation, it had contact with French Oak. Post fermentation the lees were stirred gently initially once a week, then monthly, until the balance between oak, lees and fruit characters was achieved. Malolactic fermentation was not encouraged so the vibrant natural acidity was preserved. The wine was then blended, fined and bottled.
The 2018 vintage will go down as a classic, great all-round year. Flowering and fruit set were also exceptional giving solid yields across WA. Some significant rain events in December set up the vineyard with good levels of ground water to see them through ripening. A relatively cool summer has allowed for slow, steady ripening of whites, retaining high levels of natural acidity. The moderate temperatures continued allowing for optimum ripening conditions for reds resulting in wines with elegance, structure and flavour.
