I wanted to do something a little different as I wanted to make a more 'friendly' style when the wine was young' I suppose I wanted to 'Hunterise' Barossa Valley Shiraz. How we achieve this is by using a smail percentage of Viognier grapes, harvested at the same time as the Shiraz, and cofermented. The percentage of Viognier varies each year dependent on the seasonal conditions but it ranges between 2-5 percent. The use of the Viognier grapes lengthens the palate of the Shiraz and decreases the firmness of the tannins while lifting the fruit on the nose. The resulting wine is more Rhone in style and is quite spicy, soft, velvety, with obvious but restrained tannins. A lovely drink.
