Nose: The nose exhibits sage aromas, ripe mint, and blackcurrant, and hints of cocoa nib and cigar box tones, from quality French oak
Palate: Soft cassis fruit character, sage leaf, spice and milk chocolate, and fine gravelly tannin. A typical Margaret River Cabernet style which shows excellent varietal and regional character, the wine is medium-full bodied yet elegant and restrained.
Oak: 15-18 months in a mix of French oak types
Food Match: Braised Venison with rosemary and lemon mash and steamed seasonal vegetables.

Fruit: Sourced from a low yielding Northern Margaret River site. These 20 year old vines produce very small tight bunches with an intense flavour profile. The fruit is harvested at ideal maturity levels in the cool hours of early morning.
Winemaking: A Bordeaux yeast strain is used to capture varietal characters. Once the ferment is active maceration techniques are frequent to aid in extraction of flavour from the skins. Post fermentation the wine spends a period of time on skins to build further structure.
