Stylish McLaren Vale Touriga
Sweetly spiced blueberry and mulberry fruits
Region: McLaren Vale, South Australia
Colour: Brilliant purple, purple hue.
Nose: Scented dark fruits, with violets, elderberry and bergamot.
Palate: Sweetly spiced blueberry and mulberry fruits, milk fruit and nut chocolate. Light mid palate, framed by bay leaves and orange citrus acidity. Fine savoury finish of saltbush and chalky earth, a medium bodied, very food friendly wine, made for the table.
Oak: Matured Old French oak
Food Match: RobataJapanese style barbecued over charcoal. Try small pieces of Octopus with a Kalamata olive sauce; Yakitori chicken skewers with tare sauce. Vegetarian Japanese salad of shitake, soy bean sprouts, tofu, sesame, greens and avocado with soy dressing.
Drink Until: 2025
The fruit was hand-picked and delivered to the winery on April 22. It was then gently destemmed and cold crushed to 2 tonne open top fermenters, the varieties in separate batches. We aimed to retain at least 50% of whole berries, keeping cool, cold soaking the fruit and then gently warmed to ferment over 2 days. Once fermentation had commenced the must was gently pumped over 4 times every 24 hours. During ferment the must was kept between 22-26 degrees. Primary fermentation took place for 8 days. Once the wines were dry, they were pressed to tank where the free run juice and pressings were combined. 50% of the wine was then transferred to 3 year old French oak hogsheads where it underwent malo-lactic fermentation. After 6 months in Oak, the wine was bottled at night following a micro screen filtration, on October 6, 2017. This wine is sealed under Stelvin screwcap. Vegan friendly wine.
