Hand-picked, destemmed, the whole berries rolled along a sorting table, fermented largely whole, extended post-ferment maceration with mlf in tank, matured for 18 months in French oak (30% new). The modest alcohol is a reflection of the elegant, red-berried, medium-bodied palate, spice and tannins adding complexity to the finish and aftertaste.
