Generations ago winemakers discovered that including a small portion of white grapes in a red ferment created a complexity to the structure and nose.
The 96% Shiraz and 4% Roussanne grapes in this wine are estate grown, harvested and partially barrel co-fermented, then aged in a mixture of old and new French and Hungarian oak before bottling.
With all Jester Hill's wines, Mick the winemaker, allows the vineyard to do the talking and tread as lightly as he can in the winery, letting the flavours of the unique Granite Belt ‘terroir’ shine through in the fruit.
The splash of roussanne adds a little perfume to the nose and silkiness to the palate, making it the perfect partner to a range of pork, veal, lamb and beef dishes, ready to share on any occasion!
