Saint & ScholarPinot Noir 2017
About this product
The Saint & Scholar vineyard makes for a beautiful, spectacular backdrop for our makers. North facing and particularly hilly, you’ll see the fluffiest of fluffy clouds float above as the sun sinks across the valley, making you want to stay long after the day is done.
The drier tougher soils mean the yields are lower and warmer breezes on the ridge top and exposure to sunlight help us manage disease which pinot is prone to because of thinner skins and very tight bunches. It’s a way of using natures assets to help us intervene less
To help the fragrant pinot noir we use a lot of different wine making techniques to improve smell and taste. A bit like adding jewels to a gold ring.
