Fresh and vibrant acidity, teeming with citrus fruits. Great length, with some texture from fermentation in older oak, and a lingering sea-spray finish.
Winemaking:
A unique varietal that comes from our Boyup Brook Property. Originally from Sardinia, Italy.Pressed of the skins and straight into older oak barrels forfermentation. Inoculated with various yeasts to build aromatic complexity. After fermentation, the barrels were topped and the wine was allowed to age on lees, building up interest and complexity. Taken out of barrel after 9 months and straight into stainless to finish off the winemaking process Bottled onsite.
