The grapes are harvested in the cool of the evening to prevent oxidation and optimise freshness. The juices are fermented after a gentle pressing then kept at a cool temperature to enhance the aromatic profile of the varietal. The wine stays on its lees at least two months and is stirred periodically, ensuring its smooth texture.
