Pépé's Béret - an exclusive commission by Daniel Airoldi in honour of his beloved Pépé, who tended his Sainte-Macaire vineyard with his faithful pony Pompon. The winemaking process is done to best preserve the integrity of the berry and ensure the delicate perfumes of the variety are celebrated. Skin contact maceration, gentle pressing, cold settling and fermentation are all achieved before the wine is aged for three months on its lees to ensure a smooth texture.

Light bodied white wines have a water-light mouthfeel. Often very pale to light colour.
Dry wines have no trace of sweetness at all.
