For this particular Sauvignon Blanc, the winemak- ing process is lead very carefully in order to best respect the integrity of the berry and preserve the delicate perfumes of the variety. The grapes rst undergo a six hour skin contact maceration to ex- tract as much of the fruit aromas as possible. A er a gentle pressing, the must is cold settled meticulous- ly. The fermentation is then led at a cold tempera- ture before the wine is aged for three months on its ne lees, increasing the smoothness of the texture.
