These unique barrels were sourced from MyattsField winery, a family-run estate nestled in the Perth Hills—a region renowned for world-class fortified wines. Previously, these barrels aged Pedro Ximénez and Muscat, two rich, sweet sherry styles that bring extraordinary depth to the whiskey. The ‘E’ passport stamp on the label is a nod to España, the home of sherry.
Unlike traditional single malt whiskies, which are ‘finished’ in sherry casks for around a year, Jimmy took a bolder approach. He went all in—aging our renowned Upshot new make spirit for the entirety of its maturation in these exceptional barrels. The result? A whiskey that has spent four and a half years soaking up every drop of character from its sherry-infused home.
The outcome is nothing short of bold and indulgent—a luxurious fusion of sweet syrup, raisins, dark fruits, chocolate, and vanilla, wrapped in a velvety, creamy texture.
Look- Dark amber, slight sherry red
Nose- Raisins, raspberries, cranberries, black pepper
Taste- Sweet syrup, sultanas, dark fruits, chocolate, and hints of vanilla
