The wine is fermented on skins for 15 days before being pressed and matured in 50% new French oak. Inclusion of some American oak into the oak selection gives the blend a youthful vibrancy. 
Drink me with Osso Bucco with gremolata or splurge on a selection of cheese like Ubriaco Amarone from Italy or Section 28 Monforte from the Adelaide Hills. Or alternatively find a big 'ol block of chocolate and a roaring fire. The prfect winter's night in!
