This 100% Cabernet Sauvignon wine was gently pressed and settled for 30 hours before commencing fermentation using indigenous yeast. Fermentation was sloes which has given rise to a range of fresh berry fruit aromatics, strawberry & rasberry. The palate is full of these fruit flavours and is balanced by a fine acidity that gives the wine length and balance. Match with BBQ or grilled fish, pork or veal dishes and vegetables.

Aroma: The wine offers a complex array of fresh berry fruit aromatics. Strawberry, raspberry and strawberry bon bon confection.
Palate: Full of these fruit flavours and is balanced by a fine acidity
Ageing: Ready to drink now, but will most likely continue to improve for 2-4 years with careful cellaring.
The vintage: The Bendigo wine region stuck precisely to form for the 2019 vintage, the weather in two halves. A mild, wet Spring led to good fruit set, followed by a dry, warm Summer. Overall quality very high, yields variable.
