The grapes are harvested by hand and fermented in small batches on skins for up to 15 days. A small component of whole bunches are included for tannin structure and aromatics. The wines are pressed and racked to French oak puncheons (33% new) for 14 months maturation prior to blending and bottling.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.
