Grape variety 100 percentage Shiraz Oak maturation 23 percentage new and 77 percentage older French Typical analysis 13.9 percentage AlcVol Colour Deep red with purple hue Aroma The wine opens with a lifted perfume that dances between primary fruit and exotic spice Deep concentrated aromas of black raspberry and boysenberry provide a lush foundation while complex secondary layers of sandalwood incense and aniseed add an ethereal quality The aromatic profile is rounded out with adjusting of white and black pepper all seamlessly integrated with balanced savoury oak Palate Rich and full yet maintains an elegant composure thanks to supple velvety tannins Theres concentrated boysenberry and mulberry with subtle hints of fresh raspberry The exotic spice continues on the palate with pepper incense and aniseed all wrapped around a core of savoury oak A great interplay between power and poise Food matches Seared prime beef and roasted root vegetables or Fillet of venison with wild mushroomsPeak drinkingDrinking well now but will show further integration over the next 6 8 years Viticulture The Home Block Shiraz vineyard comprises 0.7 ha of low irrigated vines planted on ironstone gravel over deep friable loam Judicious shoot and bunch thinning is always used to maintain a very light crop which was hand picked in late March of 2025 Harvested at 13.2 Baume the fruit exhibited intensely concentrated flavour and colour Winemaking The hand picked fruit was harvested early in the morning and processed straight away 5 percentage whole bunches including stalks were placed into the bottom of the fermenter before filling The remaining fruit was de stemmed into the small open fermenter with heading down board which keeps the cap fully submerged between drain and returns After nine days of fermentation the fruit was pressed into a blend of new and used French Burgundian barrelsStorage and Bottling Maturation lasted 9 months before the wine was carefully blended and bottled Bottled under screw cap to retain freshness in a premium Burgundy bottle
