Dry, Medium Bodied style of ChardonnayPairs well with ChickenIndependent wineryPicked in early March the fruit for this wine was handpicked from our Winery block. It was whole bunch pressed and cold settled to give a roughly clarified juice and then racked to a mixture of one year old barrels which were mostly of French oak. The juice then went through a 100% wild ferment. The resulting wine was matured in oak and then bottled with a minimum of filtration and no use of fining agents.
A nose of warm slightly spicy oak comes through with melon and ripe fruit characters. The palate is rich and filling with ripe apple, pear and grapefruit flavours and warm oak backing.
