Killerby maintains its small winery essence with most of its winemaking techniques and philosophies remaining the same since it was first established in 1973. The vines are hand pruned, select parcels of fruit are partially hand-picked, the wine made using small-batch techniques, highest quality of French oak barriques and meticulous attention to winemaking detail. Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity.

Grapes were crushed ever so gently to the press. The juice was drained and settled prior to fermentation in a mix of mature French oak.

Producing fresh citrus flavours of lemon with spice and weighty texture balanced by mineral acid backbone and a long refreshing chalky palate.  Drinks well with food that has texture and depth such as mild Asian dishes.
