Killerby maintains its small winery essence with most of its winemaking techniques and philosophies remaining the same since it was first established in 1973. The wine made using small batch techniques, highest quality of French oak barriques and meticulous attention to winemaking detail.
Fruit is handpicked in the cold of the morning from the Kailis
vineyard in Margaret River. The juice was patiently drained and settled prior to fermentation in oak. The use of oak in this wine is very restrained, allowing the purity of the fruit to shine through. Partial wild fermentation and yeast lees stirring weekly promotes texture. The wine is bottled after 11 months maturation and will benefit from careful cellaring.
