Dry, Full Bodied style of ShirazPairs well with BeefA delicious, cool-climate Shiraz harvested from the Ferngrove vineyard – Block 11. In 2017 the fruit for the Dragon Shiraz was 100 % hand harvested and gently destemmed into our open fermenters, followed by a period of cold soaking. The must was gently pumped over to maximise the colour and tannin extraction. The ferment was initially held cold and then slowly allowed to increase in temperature. The wine was gently pressed and filled to a mix of new and one-year-old French oak barrels. Maturation in oak was for twelve months

cellaring. Enjoy with spring lamb roasted and infused with garlic and rosemary.
