This wine was fermented using wild yeasts in new and old French oak barriques, followed by a further wild malolactic fermentation. It was bottled without fining or filtration. A beautifully balanced wine. This Chardonnay is clean and fresh, yet delivers lovely, creamy, nutty characters of marzipan, pistachio and nougat. It is opulent and silky with wonderful weight and length, lingering delightfully on the palate. Estate grown, hand picked and hand made.

Wow, for a 6 year old chardonnay, this has hardly aged at all. Still tight, bright and fresh with a little touch of creaminess, but essentially crisp. There's just a hint of bottle development, in a very good way. Delicious juicy lime and custard apple flavours, nutty complexity and deft oak handling add up to a satisfyingly long and complex wine.
