>THEME: Light and crunchy wine, very accessible, it is a good introduction to discover Alsace wines at the table.   >NATURE OF THE SOIL / CLIMATE: Produced from two early plots in village quality on clay and limestone soils.   >ENCEPTION: 70% auxerrois 30% pinot blanc, variable according to the years.   >VENDANGES: Early, manual, botrytis is eliminated if it is present.   >VINIFICATION: Slow pressing, fermentation of native yeasts, aging on fine lees for 6 months, early setting in April.   >TASTING: Nose of fruits and white flowers, fresh and crisp mouth, tasting dry.    >CONSERVATION: 2 to 5 years.   >RECOMMENDED METS: Cold starters, charcuterie, quiches, asparagus.
