50-year-Old Cabernet Sauvignon Vines represents less than 2% of the region plantings. Our vineyard is from the heart of the Valley Floor in Bethany - where the first village was settled in the Barossa Valley and the first vines in the Barossa Valley were planted.
The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with twice daily hand-plunging and pumping over of the cap to more gently extract colour, flavours and tannins. This is followed by careful basket pressing and malolactic fermentation in a combination of new and seasoned French barriques prior to 18 months maturation in our cellars. In keeping with our non-interventionalist winemaking style, we neither fine nor filter this wine.
Presented in a classic bottle that highlights its deep magenta color and Barossa origins, this Cabernet Sauvignon features a design suited for cellaring, with labeling that evokes the vineyard's historic significance and the wine's potential for graceful evolution over time.

This excellent Cabernet is made along similar lines to the Shiraz. It was a vintage that has suited Cabernet in the Barossa, creating seamless elegance with distinct varietal characters. Spicy leafy notes on the nose with a plush velvety palate structure, created by the generous fruit and ample tannin and fine oak support. Drink by 2025-2040.

It is a gorgeous rendition of the variety, showing cassis, fennel, tobacco, violet, and cedar characters on the nose. The concentrated palate delivers terrific weight and persistence, splendidly framed by refined texture and beautifully infused tannins, making it sturdy yet supple and harmonious with a sustained, satisfying finish. At its best: now to 2040.
