Dark berries, dark cherry, spice and cigar box oak on the nose. Brambly and spicy with dark fruit and firm, chewy tannins.
Process;
Crushed to small open fermenters for a slow and cool fermentation with hand plunging twice a day before being gently pressed to barrel.
The three batches of Shiraz and one of Grenache were treated similarly, although kept separately until the final blending stage.
Both varieties are aged in mostly older French oak barrels for 10 months prior to blending.
