COLOUR
Very pale straw with subtle green hue.
NOSE
Lifted tropical with florals and subtle melon.
PALATE
Vibrant juicy with intense rich varietal tropical notes. The palate is zesty
and persistent with a lovely fine lingering generosity and acidity.
WINEMAKING
The fruit was gently destemmed and pressed, keeping the pressings
separate. Following clarification of the juice it was then inoculated with
a cultured yeast strain and fermented at 15 degrees to retain the
delicate Sauvignon blanc aromas. Following fermentation, the wine was
left on fluffy lees for 4 months to impart some yeast complexity and to
enhance mouthfeel. The wine was then protein fined, cold stabilised and
bottled.

Choose from seafood, nicoise salad or oysters.
VINTAGE NOTES
2020 was one the earliest harvests in Margaret River due to the warm
dry winter of 2019, and the windy conditions during flowering.
Consequently, the yields were very low, with smaller than average berry
size, which resulted in wines which tended to be higher in alcohols with
in general more generosity and complexity. The growing season was
disease free without any major rainfall events during the ripening
period, allowing the fruit to ripen evenly during a warm to hot Spring
and Autumn.

Light bodied white wines have a water-light mouthfeel. Often very pale to light colour.
Dry wines have no trace of sweetness at all.
