Colour Medium straw. Nose Vibrant and fresh with complex notes of cashew, lime and butterscotch. Palate Generous and textured with mid palate sweetness and a lovely lingering refreshing acidity. Winemaking Hand picked in the cool of the morning and chilled in cool room overnight before being whole bunch pressed directly to barrels. As the juice warmed up in barrels, ferment commenced with natural yeasts. Fermentation was cool and even at around 18 degrees C. Once fermentation was complete the barrels were topped and periodically stirred to enhance mouthfeel and palate weight. To further increase texture 25 percent of the wine was inoculated with Malo Lactic bacteria. Following Malo lactic fermentation SO2 was added to reduce oxidation and then matured in barrels for 8 months prior to stabilization and bottling in December 2020. Wild fermented in barrel, matured for 9 months in French oak (30% new). The acid here is pert and frisky – it races around the mouth unchecked and rounds up the fruit flavours, like kelpies do sheep. Nipping at the heels is toasty, creamy oak, cushioning the impact and framing the phenolics. There is a core of pure lemon-drop fruit that huddles in the middle of the palate, suggesting that in a year or so things will have settled down on the farm and everything will knows it place.
