Colour medium straw with a green tinge. Nose Mineral with peach and limes.
Very approachable with peach and stone fruit flavours. The palate is soft and persistant with rich peach flavours and a zesty lingering acidity.
Handpicked in the cool of the morning, and chilled overnight before being whole bunch pressed directly into barrel the following day. Fermentation was carried out by natural yeast at 20 degree C. Once fermentation was complete the barrels had SO2 added to arrest any possible malo-lactic fermentation. The barrels were maintained at 10 degrees C with occasional stirring before being emptied, and prepared for bottling in October 2019.
Excellent paired with whiting with double bonito cream.
