The 2019 Gruyere Hill Chardonnay was made from grapes harvested in the cool of the night.  After gentle pressing, the juice was settled and the clear juice racked off for fermentation at low temperatures.  The low temperatures ensure the fruity aromas and flavors are retained in the wine.  After fermentation, the wine was oak-aged for about 6 months before bottling.  The oak was from the Allier forest and gives the wine a backbone of structure as well as filling out the mid-palate with some sweet spice. The 2019 Gruyere Hill Chardonnay has layers of complexity on both the nose and the palate.  Classic cool climate Chardonnay characteristics of just-ripe stone fruit are supported by spicy oak and a hint of toffee.  The wine has a textured, creamy mouthfeel and would be perfectly matched with crispy fish tacos.
