The grapes were harvested early in the season to ensure low alcohol and high acid in the wine two elements crucial for balanced sparkling wine.  After a gentle pressing, the juice was fermented at low temperatures to retain the green apple and white nectarine aromas and flavours.  At the end of alcoholic fermentation, the wine was briefly aged on yeast lees to add some creaminess to the palate. After the 2nd fermentation to add the bubbles, the wine was bottled and released to the market as fresh can be. Our Inara Yarra Valley Blanc de Blanc is the perfect accompaniment for any occasion celebratory or otherwise.  It can be enjoyed on its own or with oysters topped with a green apple granita.
