Seville EstateYarra Valley Rosé 2021
About this product
“We nicknamed this wine the ‘Car Park Rosè’ because we make it in the car park. In the later part of vintage the winery is jammed packed and the weather in late March early April (when we are picking Shiraz and Cabernet) are perfectly suited for outside fermentation. The days are mild with cool nights which is great to naturally control the fermentation temperatures. Once the fermentation slows down, we bring them back into the winery to finish the ferment, rack and settle ready for bottling.”
Since the first vintage in 1976, Seville Estate has cemented its position as one of Australia’s premium wineries, consistently receiving widespread acclaim and many prestigious awards, both in Australia and internationally. Surprisingly in a region more renowned for its red wines produced from Cabernet and Pinot Noir, it was the Seville Estate Shiraz that received the most attention, quickly becoming one of Victoria’s most sought after wines. Awarded 2019 Winery of the Year by James Halliday.
Winemaker Notes: This wine is made using the saignée method from each variety. The juice is run directly to old barrels where it undergoes fermentation with indigenous yeasts. No refrigeration is used to maintain the temperatures, instead, the barrels are left outside where the cold March nights keep the ferments cool. The wine is fermented to dryness and matured on lees for 6 months. It’s then cold settled, filtered and bottled.
