Chardonnay 90%; Pinot Noir 10%
A wine with a clear personality, well defined, but with something that’s enigmatic. It’s enveloping, dry, and determined.
Wine-Making: When they become fully ripe, the grapes are picked extremely quickly, pressed gently and fermented in steel tanks at a controlled temperature of roughly 18 °C. After pressing , some of the Chardonnay is fermented and refined in small wooden barrels.
Bottling: The cuvee is produced in Spring and the blended wine is put in bottles together with yeasts.
Refinement: The wine, not vintage, is aged on the yeasts in the bottle for at least 30 months.
Bouquet: Delicate and wide-ranging with traces of yeast and a slight and pleasant hint of vanilla.
Taste: Complete, full, charming, and persistent.
